Description
A creative fusion dessert that combines the flavors of classic American apple pie with the fun presentation of enchiladas. Warm cinnamon-spiced apples are wrapped in soft flour tortillas and baked in a rich brown sugar sauce until golden and bubbly.
Ingredients
Scale
- 1 can (21 ounces) apple pie filling
- 1 teaspoon ground cinnamon
- 1/2 cup (1 stick) butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- 6 flour tortillas (8-inch)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Mix apple pie filling with ground cinnamon in a bowl.
- Spoon a generous portion of the spiced apple filling along the center of each flour tortilla.
- Roll each tortilla tightly and place seam-side down in the prepared baking dish.
- In a medium saucepan over medium heat, melt butter. Add white sugar, brown sugar, and water, stirring until sugars dissolve and mixture bubbles gently.
- Remove from heat and stir in vanilla extract.
- Pour the warm brown sugar sauce evenly over the rolled enchiladas.
- Bake for about 20 minutes, until sauce is bubbly and tortillas are golden on the edges.
- Let rest for 5-10 minutes before serving to allow sauce to thicken.
Notes
- Don’t overfill tortillas to prevent spilling during baking
- Use fresh, soft tortillas to prevent cracking when rolling
- Can be assembled ahead and refrigerated up to 24 hours before baking
- Freezer friendly – freeze unbaked for up to 2 months
- Serve with vanilla ice cream, whipped cream, or caramel sauce
- Can substitute with other pie fillings like cherry, peach, or berry
