Description

  • 1 teaspoon ground cinnamon
  • 1/2 cup (1 stick) butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 6 flour tortillas (8-inch)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Mix apple pie filling with ground cinnamon in a bowl.
  3. Spoon a generous portion of the spiced apple filling along the center of each flour tortilla.
  4. Roll each tortilla tightly and place seam-side down in the prepared baking dish.
  5. In a medium saucepan over medium heat, melt butter. Add white sugar, brown sugar, and water, stirring until sugars dissolve and mixture bubbles gently.
  6. Remove from heat and stir in vanilla extract.
  7. Pour the warm brown sugar sauce evenly over the rolled enchiladas.
  8. Bake for about 20 minutes, until sauce is bubbly and tortillas are golden on the edges.
  9. Let rest for 5-10 minutes before serving to allow sauce to thicken.
