Ingredients
Scale
- 2 large English cucumbers (about 1 pound)
- 1 tablespoon kosher salt
- 3 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 1 tablespoon honey or maple syrup (for vegan option)
- 1–2 teaspoons sriracha or chili oil
- 2 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 green onions, thinly sliced

- Fresh cilantro for garnish (optional)
- 1 red chili, thinly sliced (optional)
Instructions
- Prepare Cucumbers: Slice cucumbers thinly. Use the “smashing” technique for better flavor absorption.
- Salt Cucumbers: Sprinkle salt over sliced cucumbers in a colander. Let sit for 2 minutes to remove excess moisture.

- Add Finishing Touches: Sprinkle with green onions, sesame seeds, cilantro, and red chili if using.
Notes

- Adjust sriracha to your desired spice level.
