- 6 tablespoons unsalted butter, melted
- 4–6 garlic cloves, minced (approximately 2 tablespoons)
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 teaspoon salt (kosher preferred)
- ½ teaspoon freshly ground black pepper
- 2 tablespoons Parmesan cheese, grated (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 425°F (220°C). Wash potatoes thoroughly under cold running water and pat completely dry with paper towels.
- Slice potatoes into evenly sized pieces, approximately 1-inch cubes.
- In a small microwave-safe bowl, melt the butter. Add minced garlic, dried herbs, salt, and pepper to the melted butter.
- Place potato pieces in a large mixing bowl. Pour the garlic butter mixture over them. Add the olive oil and toss thoroughly until each potato piece is coated. Add Parmesan cheese if using.
- Transfer potatoes to a large baking sheet lined with parchment paper, arranging in a single layer with space between pieces.
- Bake for 20 minutes, then remove the tray and flip each potato piece. Return to the oven for another 15-20 minutes, until golden brown with crispy edges and fork-tender centers.
- Remove from oven and immediately sprinkle with fresh parsley.
