  • 2 tablespoons Parmesan cheese, grated (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Wash potatoes thoroughly under cold running water and pat completely dry with paper towels.
  2. Slice potatoes into evenly sized pieces, approximately 1-inch cubes.
  3. In a small microwave-safe bowl, melt the butter. Add minced garlic, dried herbs, salt, and pepper to the melted butter.
  4. Place potato pieces in a large mixing bowl. Pour the garlic butter mixture over them. Add the olive oil and toss thoroughly until each potato piece is coated. Add Parmesan cheese if using.
  5. Transfer potatoes to a large baking sheet lined with parchment paper, arranging in a single layer with space between pieces.
