Ingredients
Scale
- 8 small white onions (about 2–3 inches in diameter)
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 large eggs
- 1 cup buttermilk (or substitute regular milk with 1 tablespoon lemon juice)
- Vegetable oil for frying (approximately 4 cups)
Dipping Sauce:
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons horseradish sauce
- ¼ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Peel onions, trim stem end, and make 8-10 vertical cuts from top down, stopping ¼ inch from the bottom. Make a small X-shaped cut on the root end.
- Soak prepared onions in ice water for 10 minutes.
- In a large bowl, whisk together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- In a separate bowl, beat eggs and buttermilk until combined.
- Heat vegetable oil in a medium pot to 375°F (190°C).
- Batter each onion: dredge in flour mixture, dip in egg mixture, then dredge in flour mixture again, ensuring batter gets between “petals.”
- Fry 2-3 onions at a time for 3-4 minutes until golden brown and crispy.
- Remove and place on paper towels to drain.
- Whisk together dipping sauce ingredients in a small bowl.
- Serve onions immediately with dipping sauce.
Notes
- Soak your prepared onions in ice water for 10 minutes before battering for crispier texture.
- For extra crispiness, add 2 tablespoons of vodka to your batter.
- Never fill your pot more than halfway with oil.
- Monitor your oil temperature between batches for consistent results.
- For a more complex flavor profile, let your sauce sit in the refrigerator for at least 15 minutes before serving.
