- 1 large loaf of Italian bread
- 1 lb (450g) thinly sliced beef (ribeye, sirloin, or pre-sliced steak)
- 1 cup sliced bell peppers (assorted red, yellow, and green)
- 1 cup sliced onions (vidalia or yellow)
- 2 cups shredded provolone cheese
- 3 tablespoons garlic butter (homemade or store-bought)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Prep all your fillings: thinly slice the bell peppers and onions, and ensure beef is thinly sliced.
- Heat a large skillet over medium-high heat. Add a swirl of oil or butter, then sauté the sliced onions and bell peppers for 3-4 minutes until softened and beginning to caramelize.
- Push the veggies to one side, add the beef, season with salt and pepper, and cook until just browned (2-3 minutes). Mix everything together and remove from heat.
- Using a sharp bread knife, slice off the top third of the Italian bread lengthwise. Hollow out the inside, creating a well while leaving enough bread around the edges for support.
- Brush the entire inside of the loaf generously with garlic butter.
- Layer half of the shredded provolone directly onto the base of your bread well.
- Spread the warm beef-and-veggie mixture evenly over the cheese.
- Top with the remaining provolone cheese.
- Place the reserved bread “lid” back over the loaf, gently pressing down.
- Place the assembled loaf on a prepared baking sheet and bake for 15-18 minutes, until the crust is golden brown and cheese is melted.
- For extra browning, broil for 1-2 minutes, watching closely to prevent burning.
- Allow to cool for a few minutes, slice into portions, sprinkle with fresh parsley, and serve immediately.

- Slice beef as thin as possible—freezing it briefly makes slicing much easier.
- Use room temperature butter for easy spreading; infuse with fresh minced garlic and parsley for homemade garlic butter.
- Hollow out the bread carefully to prevent tearing for a sturdy, leak-free loaf.
