    • 1 red bell pepper (sliced)
    • 1 yellow bell pepper (sliced)
    • 1 small red onion (sliced)
    • 1 tbsp olive oil
    • Salt and pepper to taste
  • For the sauce:
    • ¼ cup tahini
    • 2 tbsp lemon juice
    • 1 tbsp maple syrup
    • 1 clove garlic (minced)
    • 23 tbsp water to thin

Instructions

  1. Preheat oven to 425°F.
  2. Toss sweet potatoes with olive oil and spices; roast on a baking sheet for about 20-25 minutes.
  3. Season chicken strips; cook in a skillet over medium-high heat until golden brown.
  4. Roast vegetables on a separate sheet pan for about 15-18 minutes.
  5. Whisk together tahini sauce ingredients; adjust consistency with water.
  6. Assemble bowls by layering sweet potatoes, chicken strips, roasted vegetables; drizzle with tahini sauce.
