  • 1 cup cold water, divided
  • 1½ cups granulated sugar

  • Pink and blue food coloring (gel preferred for vibrant colors)
  • ½ cup powdered sugar
  • ½ cup cornstarch

Instructions

  1. Line a 9×13-inch baking pan with parchment paper and lightly coat with cooking spray.
  2. Whisk together powdered sugar and cornstarch in a small bowl.
  3. Pour ½ cup cold water into the bowl of your stand mixer and sprinkle the gelatin over the surface. Let it bloom for 5 minutes.
  4. In a medium saucepan, combine sugar, corn syrup, salt, and remaining ½ cup water. Heat to 240°F (soft-ball stage).
  5. With the mixer on low, pour the hot sugar syrup into the bloomed gelatin. Increase speed to high and whip for 10-12 minutes.
  6. Add cotton candy flavoring during the final minute of whipping.
  7. Divide the mixture between two bowls. Add pink food coloring to one bowl and blue to the other.
  8. Dollop spoonfuls of pink and blue marshmallow mixture into your prepared pan. Use a knife or skewer to create gentle swirls.
  9. Dust the top with the powdered sugar mixture. Allow the marshmallows to set uncovered at room temperature for at least 4 hours or overnight.
  10. Use the parchment paper overhang to remove the marshmallow slab from the pan. Cut into 1-inch squares and toss in the remaining powdered sugar mixture.
