Step 1: Prepare the Crab

Step 2: Make the Custard

The key to a perfect crab brulee is a smooth, creamy custard. Here’s how to prepare it:

  • In a medium saucepan, heat 1 cup of heavy cream over medium heat. You don’t need to bring it to a boil; just warm it until small bubbles begin to form around the edges.
  • While the cream is heating, whisk together 3 large egg yolks and 1/4 cup of sugar in a bowl. Whisk until smooth and the sugar is dissolved.
  • Once the cream is warmed, slowly pour it into the egg mixture while whisking continuously to prevent the eggs from scrambling. This is called tempering the eggs.
