- ½ cup unsalted butter
- ¼ teaspoon salt
- 1 cup all-purpose flour (or gluten-free flour)
- 4 large eggs, room temperature
Filling:
- 2 packages instant vanilla pudding mix
- 2½ cups cold milk
- 8 oz cream cheese, softened
- 8 oz whipped topping, thawed
Topping:
- ½ cup semi-sweet chocolate chips
- 2 tablespoons butter
- 1 tablespoon corn syrup
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease 9×13-inch baking dish; optionally line with parchment paper.
- In saucepan, bring water, butter, and salt to boil. Remove from heat, stir in flour all at once. Return to low heat, stir until dough forms ball and pulls from pan (1-2 minutes).
- Transfer dough to bowl; cool 5 minutes. Beat in eggs one at a time until dough is thick, glossy, and smooth.
- Spread dough evenly in baking dish using spatula dipped in cold water.
- Bake 30-35 minutes until golden and dry to touch. Do not open oven first 25 minutes.
- Cool crust completely (about 30 minutes).
- Beat cream cheese until fluffy. Whisk pudding mix and cold milk 2 minutes until thickened. Fold pudding into cream cheese, then fold in whipped topping gently.
- Spread filling evenly over crust. Refrigerate 15 minutes to set.
- Melt chocolate chips and butter in microwave in 20-second intervals, stirring until smooth. Stir in corn syrup and vanilla.
- Drizzle or spread chocolate topping over filling. Refrigerate at least 3 hours before serving.
Notes
