Instructions

  1. In a medium saucepan, combine rolled oats and milk. Bring to a gentle simmer over medium heat, stirring occasionally for 4-5 minutes.
  2. In a small bowl, whisk together the egg, vanilla extract, and salt until completely blended.
  3. Temper the egg by gradually whisking a small ladle of hot oatmeal mixture into the egg mixture, stirring constantly. Repeat with a second scoop.
  4. Pour the tempered egg mixture slowly back into the saucepan, whisking continuously. Reduce heat to low.
  5. Continue cooking for 2-3 minutes, stirring constantly, until the oatmeal thickens into a creamy custard consistency.
  6. Remove from heat and stir in honey or maple syrup until fully dissolved.
  7. Ladle into bowls and add your favorite toppings such as fresh berries, sliced bananas, and chopped nuts.

Notes

  • Always temper the egg before adding to prevent scrambling
  • Use low, gentle heat when thickening the custard to avoid curdling
