Description

Irresistibly light and fluffy apple pancakes that combine the comforting warmth of cinnamon-spiced apples with a cloud-like texture. This quick recipe delivers restaurant-quality results in just 15 minutes, making it perfect for busy mornings when you crave something special without the wait.

Ingredients

Scale
  • 1½ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1¼ cups whole milk
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 cup grated apple (about 1 medium apple, preferably Honeycrisp or Granny Smith)
  • 2 tablespoons vegetable oil or butter for cooking
  • 2 medium apples, peeled and diced into ¼-inch cubes (for topping)
  • 2 tablespoons unsalted butter (for topping)
  • 3 tablespoons brown sugar (for topping)
  • ½ teaspoon ground cinnamon (for topping)
  • Pinch of salt (for topping)
  • 2 tablespoons water (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  2. In a separate bowl, whisk the milk, eggs, melted butter, and vanilla extract.
  3. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined – some small lumps are perfectly fine!
  4. Gently fold the grated apple into the batter. Let the batter rest for 3 minutes.
  5. While the batter rests, melt butter in a small saucepan over medium heat. Add the diced apples, brown sugar, cinnamon, and salt.
  6. Cook for about 3 minutes, stirring occasionally, until the apples are slightly softened but still maintain their shape. Add water and let it simmer for 30 seconds until slightly thickened. Remove from heat and set aside.
  7. Heat a non-stick skillet or griddle over medium heat. Add a small amount of oil or butter to coat the surface.
  8. For perfectly uniform pancakes, use a ¼-cup measuring cup to pour the batter onto the hot surface.
  9. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown and cooked through.
  10. Transfer the fluffy apple pancakes to serving plates, stacking them as desired. Spoon the warm apple topping generously over your pancake stack.

Notes

  • Avoid overmixing the batter to ensure fluffy pancakes – small lumps are desirable.
  • Room temperature eggs and milk incorporate more air into the batter, resulting in fluffier pancakes.
  • For dairy-free version, substitute milk with almond or oat milk and butter with coconut oil.
  • The batter can be prepared the night before without the baking powder and grated apple. Add these ingredients just before cooking.
  • Leftovers can be refrigerated in an airtight container with parchment paper between layers for up to 3 days.
  • Pancakes can be frozen for up to 2 months. Freeze in a single layer first, then transfer to a freezer bag.
  • The apple topping can be made 5 days in advance and reheated gently before serving.
