Description

  • 2 cups water

  • 68 crusty rolls (French rolls, hoagie buns, or baguettes)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season chuck roast generously with kosher salt and black pepper.
  2. Sear the beef on all sides until golden-brown crust develops, about 8-10 minutes total. Remove to a plate.
  3. Add dry onion soup mix to the same pot, scraping up browned bits. Pour in beef broth and water, stirring to dissolve soup mix.
  4. Return beef to pot, submerging as much as possible. Bring to gentle simmer, then cover tightly.
  5. Reduce heat to low and braise for 3-4 hours until fork-tender, or transfer to slow cooker on LOW for 7-8 hours.
  6. Remove beef and shred into bite-sized pieces using two forks. Discard excess fat.
  7. Strain cooking liquid through fine-mesh strainer, skimming excess fat. Adjust seasoning as needed.
  8. Slice rolls in half and layer generous amount of shredded beef on bottom half. Top with cheese slice.
  9. Place open-faced rolls on baking sheet and broil briefly until cheese melts and bubbles.
  10. Close sandwiches and serve immediately with hot au jus for dipping.
