Description

A savory, umami-rich meatloaf featuring sautéed mushrooms and creamy Swiss cheese, topped with a tangy glaze for a comforting yet gourmet dinner.

Ingredients

Scale

Meatloaf Base:

  • 2 pounds ground beef (85/15 lean-to-fat)
  • 1 cup finely chopped mushrooms (cremini preferred)
  • 1½ cups shredded Swiss cheese, divided
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 2 large eggs, lightly beaten
  • ¾ cup breadcrumbs (panko preferred)
  • ¼ cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Glaze:

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment.
  2. Heat olive oil in skillet over medium heat. Sauté onions until translucent (3-4 min). Add mushrooms, cook until browned and moisture evaporates (5-7 min). Add garlic, cook 30 sec.
  3. In large bowl, combine ground beef, sautéed mushroom mixture, 1 cup Swiss cheese, eggs, breadcrumbs, milk, Worcestershire sauce, mustard, thyme, salt, and pepper. Mix gently until just combined.
  4. Shape mixture into a loaf about 9×5 inches on prepared sheet. For cheese filling, create a tunnel and fill with remaining ½ cup cheese, then seal top.
  5. Mix glaze ingredients until smooth. Spread two-thirds over meatloaf.
  6. Bake 40 minutes, remove, apply remaining glaze, bake another 15-20 minutes until internal temp reaches 160°F (71°C).
  7. Rest 10-15 minutes before slicing.

Notes

  • Do not overmix to keep meatloaf tender.
  • Sauté mushrooms to reduce moisture and boost flavor.
  • Let rest after baking for juicy slices.
  • Use gluten-free breadcrumbs and check Worcestershire for gluten if needed.
  • Prepare ahead for better flavor.
