For the Base
- 2 cups rolled oats
- 1 cup natural creamy peanut butter
- ⅓ cup pure maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt

- ¾ cup dark chocolate chips (70% cacao or higher)
- 1 tablespoon coconut oil
- 2 tablespoons chopped peanuts (optional)
- Flaky sea salt (optional)
Instructions
- Line a muffin tin with paper liners.
- Mix oats, peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until cohesive.
- Divide the mixture into muffin cups and press down to form cups.
- Melt chocolate with coconut oil in the microwave.
- Spoon melted chocolate over each cup and garnish with peanuts and flaky sea salt if desired.
- Chill in the refrigerator for at least 45 minutes.
Notes
Use room temperature peanut butter for better mixing. Avoid using quick oats as they can become mushy.
