Ingredients

  • 1 cup natural creamy peanut butter
  • ⅓ cup pure maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • For the Topping:

  • ¾ cup dark chocolate chips (70% cacao or higher)
  • 1 tablespoon coconut oil
  • 2 tablespoons chopped peanuts (optional)
  • Flaky sea salt (optional)

Instructions

  1. Line a muffin tin with paper liners.
  2. Mix oats, peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until cohesive.
  3. Divide the mixture into muffin cups and press down to form cups.
  4. Melt chocolate with coconut oil in the microwave.
  5. Spoon melted chocolate over each cup and garnish with peanuts and flaky sea salt if desired.
  6. Chill in the refrigerator for at least 45 minutes.

Notes

Use room temperature peanut butter for better mixing. Avoid using quick oats as they can become mushy.
