- 14 oz (397 g) sweetened condensed milk
- 2 Tbsp (30 ml) vanilla extract
- 3 large ripe peaches, peeled and diced
- 6 Tbsp (75 g) granulated sugar (for compote)

- 6 Tbsp (84 g) unsalted butter, melted
- ¾ cup (150 g) granulated sugar (for crumbs)

- ¾ cup (94 g) all-purpose flour
- 2 tsp baking powder
- ⅛ tsp salt
Instructions
- Whip cold heavy cream in a large mixing bowl until stiff peaks form. In a separate bowl, whisk together sweetened condensed milk and vanilla extract. Gently fold whipped cream into condensed milk mixture and refrigerate.
- Peel and dice peaches into small pieces. Place peaches, 6 Tbsp sugar, and 2 tsp vanilla in a saucepan over medium heat. Stir occasionally, mashing lightly, until fruit softens and juices thicken (8-10 minutes). Cool completely.
- Preheat oven to 350°F (175°C). Line baking sheet with parchment. Combine melted butter, ¾ cup sugar, and 2 tsp vanilla. Add milk and stir. Mix in flour, baking powder, and salt. Drop small clumps onto baking sheet and bake 12-15 minutes until golden. Cool completely.
- In a 9×5-inch loaf pan, layer ice cream base, peach compote, and cobbler crumbs in thirds, gently swirling with knife for marbled effect. Finish with extra crumbs on top.
- Cover securely with plastic wrap and freeze for at least 6 hours or overnight until firm.
- Let sit at room temperature for 5 minutes before scooping and serving.
