  • 1 small onion, diced

  • 1 tablespoon yellow mustard

  • 3 cups cooked pasta (elbow macaroni, penne, or rotini)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup crushed crackers or French fried onions (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until just al dente. Drain and set aside.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a wooden spoon. Drain excess fat if needed.
  3. Add diced onions, bell pepper, and minced garlic to the skillet. Cook for 3-4 minutes until vegetables are soft and fragrant.
  4. Stir in tomato sauce, ketchup, brown sugar, Worcestershire sauce, yellow mustard, salt, and pepper. Lower heat and simmer for 5-8 minutes until sauce reduces and becomes flavorful.
  5. Preheat oven to 350°F (175°C). In a large mixing bowl, combine cooked pasta, Sloppy Joe meat sauce, and half of the shredded cheddar cheese.
  6. Pour mixture into a greased 9×13-inch baking dish. Top with remaining cheddar cheese and optional crushed crackers or French fried onions.
