    • 8 ounces high-quality white chocolate, finely chopped
    • 1 cup heavy cream, divided
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
    • 1 envelope unflavored gelatin
    • 3 tablespoons cold water

Instructions

  1. Prepare the Springform Pan: Grease a 9-inch springform pan, line with parchment paper, and wrap with aluminum foil.
  2. Create the Chocolate Base: Mix cookie crumbs, melted butter, sugar, and salt. Press into the pan.
  3. Prepare the Dark Chocolate Mousse: Melt chocolate and butter. Bloom gelatin, then dissolve. Whip cream with sugar and vanilla. Combine melted chocolate, gelatin, and whipped cream. Pour over the base and chill.
