- 3 cups old-fashioned rolled oats
- 1 cup crispy rice cereal
- ½ cup chopped nuts (almonds, walnuts, or pecans)
- ⅓ cup ground flaxseed or chia seeds
- ½ cup honey or maple syrup
- ⅔ cup natural nut butter (almond, peanut, or cashew)
- 1 teaspoon pure vanilla extract
- ¼ teaspoon sea salt
- ½ cup mix-ins (dried fruits, chocolate chips, or coconut flakes)
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- Toast oats and nuts in a skillet over medium heat for 5-7 minutes, stirring frequently. Let cool.
- In a large bowl, combine toasted oats, nuts, cereal, flaxseed, and salt.
- In a microwave-safe bowl, heat nut butter and honey/maple syrup for 30-45 seconds. Stir in vanilla.
- Pour wet ingredients over dry ingredients and mix thoroughly.
- Fold in mix-ins.
- Press firmly into the prepared pan.
- Cool for 2 hours at room temperature or 45 minutes in the freezer.
- Cut into 16 bars.
- Wrap and store in an airtight container.
